Ushering in the winter season, Olive Café & Bar (OCB), Chandigarh, has unveiled its new ‘Winter Menu’ alongside a sumptuous ‘Sunday Brunch’ curated by their Head Chef Karl Whittaker.
The menus were unveiled during a press meet hosted by Chef Karl Whittaker, who shared with the media a refreshing take on Mediterranean flavours—celebrating vibrant, comforting dishes crafted with seasonal ingredients.
Notably, Chef Karl has over a decade of experience in culinary arts. He trained in French cuisine in the UK and later worked as head chef in Florence, Italy. Karl combines traditional Mediterranean techniques with a creative, modern flair.
Talking about the Winter Menu, he informed that from the Black Rice Kisir Salad, with its nutty pistachios, pomegranate, and fresh herbs, to the Himalayan Trout En Papillote, delicately infused with fennel and herbs, every dish reflects a balance of flavours. The Vadouvan Chicken, marinated in a blend of spices and orange, is a hearty favourite that pairs bold flavours with thoughtful preparation. For those looking for something indulgent, the seasonal special Potato Dauphinois Pie offers a rich, cheesy twist with homemade pastry and fresh vegetables.
The new menu also introduces subtle innovations that add variety and excitement to the dining experience. Grilled meats, vibrant salads, and small plates inspired by the coastal kitchens of Southern Europe and North Africa make it perfect for relaxed lunches or cozy dinners.

Chef Karl shared details of OCB’s much-awaited ‘Sunday Brunch’, saying that it takes a more indulgent turn, offering a leisurely escape into Mediterranean mornings with picnic baskets containing fruits, cupcakes, a cheese board, and giveaways for each table.
The Shakshuka Skillet, with dukkah and feta, and the Croque Madame, layered with golden mornay sauce and egg, bring vibrant, flavorful starts to the day. Lighter options like Greek yoghurt bowls with house-made accompaniments are the perfect blend of comfort and freshness.
